Brewing & Storage Instructions

 

Brewing Instructions:

Water temperature makes all of the difference when brewing Japanese green tea.  The amount of tea, water, and brewing time varies by tea type, but also by personal preference.  Experiment to find your perfect cup of tea and use these notes as a general guideline. Typically 1-2 grams (1-2 TBS) per potful (200ml).  The more tea leaves, the more concentrated and stronger the tea. For the second infusion, simply add more water without steeping for more than 30 seconds.   For a genuine Japanese tea brewing experience we recommend brewing your hot tea in a kyusu (Japanese teapot).  However, a simple tea infuser in your favorite cup will make a perfectly delicious cup of tea.

Sencha:  Bring water to 165º F - 180º F (70-80º C).  Brew for 1-2 minutes.

Shincha:  Bring water to 165º F - 180º F (70-80º C).  Brew for 1-2 minutes.

Genmai Matcha: Bring water to 165º F - 180º F (70-80º C).  Brew for 1-2 minutes.

Fukamushi:  Bring water to 165º F - 180º F (80º C).  Brew for 1 minute.

Kabusecha:  Bring water to 140º F (60º C).  Brew for 3 minutes.

Gyokuro:  Bring water to 140º F (60º C).  Brew for 3 minutes.

GABAlong: Bring water to 165º F - 180º (70º - 80º C).  Brew for 1-2 minutes.

Houjicha:  Bring water to 194º F (90º C).  Brew for 30-60 seconds.

Oolong:  Bring water to 194º F (90º C).  Brew for 30-60 seconds.

Black Tea:  Bring water to 194º F (90º C).  Brew for 30-60 seconds.

Easy Cold Brew Tea Method:  Add 1-3 grams of tea leaves to infuser pitcher, or 1-3 grams of tea leaves to a tea bag and add tea bag to a pitcher.  Add 4-6 cups cool water, set in refrigerator until chilled. 1-3 hours. 

How to Make Matcha:

*Always sift matcha before preparing.

Usucha (Thin matcha) - Bring 2.3 oz water to 158-176º F.  Add 2 scoops or 1 tsp of usucha, matcha to a bowl.  Add water.  With a usucha-style, matcha whisk (50-120 thin prongs), mix rapidly with wrist in a "W" or zigzag pattern until a fine foam appears.  Break up any large bubbles.  Enjoy!

Koicha (Thick matcha) - Bring 1.3 oz of water to 158-176º F.  Add 3-4 scoops or 2-3 tsp of koicha, matcha to a bowl. Add water.  With a koicha-style, matcha whisk (32-48 thick prongs), mix in a circular, 360º motion until a thick yet smooth consistency, free of foam, is reached.  Enjoy!

Storage Instructions:

Always store loose leaf tea in the refrigerator prior to opening when possible.  After opening, keep tea sealed in an airtight bag or food-safe storage container.  Do not re-refrigerate after opening.  Consume within 2 weeks after opening for freshest taste and aroma.
